Jean Coussau draws his inspiration from local produce: fish from the ocean or the Adour, poultry, duck and foie gras from the Landes, beef from Chalosse, game, asparagus from Magescq... and Jacques Coussau, restaurant manager and sommelier, manages a two-generation cellar and a service that includes carving and pedestal table service, as well as flambéing in the grand tradition of French tableware.
